Tasty Tuesdays | Sweet Potato Veggie Burger

Today, I am starting something new. From now on, every Tuesday post will be devoted to food! Each week on these “Tasty Tuesdays,” I’ll feature a new fun recipe that you can try in your kitchen.

This week’s featured dish? Sweet potato veggie burgers. I’ll admit, when I first saw the recipe, I was reluctant to the idea of a meatless burger…but my friend Ashley was in town for the weekend, and I knew that she needed vegan foods. Saturday night was the perfect time to try this flavorful creation.

This pan-fried, easy burger is full of healthy and simple ingredients like sweet potatoes and cannelloni beans. It’s something to really sink your teeth into and will leave you full for hours.

I found this recipe on Pinterest (you can find the original here). Ours is very similar, with a slight variation on ingredients. We served the patties with fresh, sliced avocado, spinach, onion and Dijon mustard.

Sweet Potato Veggie Burgers
makes 6-8 large patties

Overall ease – fun and easy, 5 stars
Prep and cooking time – roughly 30 minutes

2 cans cannellini white beans, drained
2 medium sweet potatoes, baked/peeled/mashed
2 tsp maple syrup
2 tsp lemon juice OR Cajun seasoning (with a dash of salt and pepper)
1/2 cup flour

Panko crumbs
Olive oil

For the burgers: avocado, Dijon mustard, grain buns, spinach, onion

Directions:

1. Microwave sweet potatoes. Peel carefully, place in large mixing bowl.
2. Add drained beans to mixing bowl. Mash beans and potato together.
3. Mix in seasonings, lemon juice and flour. Continue to mash everything down until moist and soft. Add more flour, a scoop of breadcrumbs or dry rice to thicken the mixture if needed.
4. Heat 1 Tbsp olive oil in a pan over high heat.
5. Form a medium-sized patty (not too heavy) from mixture and coat it thoroughly with Panko crumbs.  Place patty in the pan. Repeat until the pan is filled. Cook until browned on both sides.
6. Transfer cooked patties to paper towel. Cool for a few minutes.
7. Serve on toasted bun with as many toppings as you want!

Note: The patty may fall apart, but it is delicious all the same. (:

We made our patties a little too big, but they still turned out okay!
