I realize it’s not Tuesday, but, seeing that I was on an airplane all day yesterday, I had to wait until today to share with you this week’s recipe!
Last week, to celebrate my internship/squeeze in a beach trip before I left, Alex and I treated ourselves to a picnic on the beaches of New Buffalo, Mich. I knew I wanted to make sandwiches and a fruit salad, but I didn’t want to stick to the same old turkey-on-wheat that I am used to having for lunch.
I wanted to break away from the traditional.
After drawing some inspiration from Martha Stewart, I ended up making these Ham, Provolone and Apple Sandwiches.
Ah summer… definitely the time to experiment with the abundance of fresh flavors that are available to us!
I especially loved the pumpernickel bread on this sandwich. When I was a child I ate pumpernickel often, but I’m pretty sure this was the first time I had eaten it in years.

Ham, Provolone and Apple Sandwich
Ingredients
Provolone cheese, sliced
Green apple, sliced thinly
2 slices pumpernickel bread
Ham, sliced and toasted
Fruit preserves (apricot or mango)
Instructions
1. Layer cheese, ham and apple onto 1 slice toasted bread. Spread the preserves on the second toasted slice and place on top.
