I almost did a backflip at Meijer this morning. However, considering the gymnastic phase of my life only lasted for a short, three months, I decided to hold my excitement inside.
You know you’re a foodie when you freak out about Brie being on sale. To be exact, it was $2 off.
It’s not too often I buy gourmet cheeses. Havarti, Gouda, goat, Brie: I love them all. But I am a college student, and typically, my budget only allows Cheddar, provolone and Mozzarella purchases … the usuals. Not that there is anything wrong with those kind of cheeses. All cheese is delightful! Some cheeses are just better.
When it comes to a panini, change the type of melted cheese, and you have a completely different sandwich. If provolone were substituted for this Oven Roasted Turkey, Brie + Blackberry Panini, it would not have the same effect.

Ingredients (Serves 2)
1 cup fresh blackberries
1/4 teaspoon basil
1/2 teaspoon lemon juice
4 ounces (1/4 pound) oven roasted turkey breast, shaved
1 tablespoon olive oil
2 multigrain ciabatta rolls, sliced
2 teaspoons Dijon mustard
2 ounces of brie cheese, sliced
1. In a medium bowl, mash blackberries and stir in basil and lemon juice.
2. Heat a large skillet (you can use a George Foreman too) over medium-low heat.
3. Lightly brush the sides of two slices of bread with the olive oil and place them on the skillet oiled-side down.
4. Spread the Dijon mustard on the dry sides of the bread. Layer the bread with a few slices of cheese, shaved turkey and blackberries. Top with a few more slices of cheese, then brush the top side of the other bread slices with oil and place on top of the cheese. Cook for 3 minutes or until the cheese has started to melt, then flip and cook the other side until golden. Serve it while it’s hot!
